White Chili

Serves 8

1 lb Northern Beans
4-5 chicken breast, seasoned, cooked and diced
1 T olive oil
2 onions, chopped
4 cloves garlic, minced
2 cans mild green chilies, chopped
2 t ground cumin
1-1/2 T dried oregano
1/2 T red pepper
6 cups chicken broth
2 cups water
1 1/2 cups grated cheese
Grated cheese, sour cream, salsa, green onions and avocados for toppings

If using dried beans, soak and prepare. Heat oil in large Dutch oven and sauté onions. Add garlic, chilies, seasonings, beans, broth and water. Cook over low heat for about 2 hours. Add chicken and cheese.

Top each serving with choice of toppings.

Can be prepared ahead and frozen until ready to serve.
