1 lb Northern Beans
4-5 chicken breast, seasoned, cooked and diced
1 T olive oil
2 onions, chopped
4 cloves garlic, minced
2 cans mild green chilies, chopped
2 t ground cumin
1-1/2 T dried oregano
1/2 T red pepper
6 cups chicken broth
2 cups water
1 1/2 cups grated cheese
Grated cheese, sour cream, salsa, green onions and avocados for toppings
If using dried beans, soak and prepare. Heat oil in large Dutch oven and sautÃ© onions. Add garlic, chilies, seasonings, beans, broth and water. Cook over low heat for about 2 hours. Add chicken and cheese.
Top each serving with choice of toppings.
Can be prepared ahead and frozen until ready to serve.
