6 8-inch flour tortillas
3 tablespoons melted butter
2 cups grated mild white cheese like Monterey Jack
1-1/2 cups cooked corn (or defrosted frozen corn)
1 lime, cut into 6 wedges
With your pastry brush, lightly brush each tortilla with some melted butter. Sprinkle about 1/3 cup of grated cheese over half of each tortilla. Top with 1/4 cup of corn. Squeeze a few drops of fresh lime juice over the corn. Fold the tortillas in half to form a turnover.
Broil or bake until top turns golden with brown spots. If you broil, cook for approximately 1 minute on each side. Baking will take approximately 10 minutes at 425 degrees.
