Double Dippin' Fruit

1 4-1/4 oz can vanilla pudding
3 Tbsp. caramel ice cream topping
1/2 tsp. vanilla
1/4 of an 8oz. container frozen light whipped dessert topping, thawed
3/4 cup low-fat granola
Assorted cut-up fresh fruit ( such as apples, bananas and/or strawberries)
1. For dip: In medium bowl, combine pudding, caramel topping, and vanilla; stir until smooth. Fold in whipped topping.
2. Transfer dip to serving bowl. Place granola in another serving bowl. Serve dip with fruit, dipping fruit into caramel mixture and then into granola.
