Crunchy Chicken Tenders
3/4 cup cornflakes cereal
1/2 cup flour
3/4 teaspoon salt
1/2 teaspoon pepper
1/3 cup buttermilk
1 pound boneless chicken breast
Heat oven to 400 degrees. Line pan with foil and spray with cooking oil.
Put cereal, flour, salt and pepper in a plastic bag and seal. Use a rolling pin or glass to crush flakes. Cut chicken into strips. Pour buttermilk into bowl. Dip chicken into buttermilk and drop into bag with crushed flakes mixture. Shake bag to coat chicken. Put coated chicken on pan. Spray chicken with cooking spray.
Bake 25 - 30 minutes until the coating is crisp and chicken is no longer pink in the center.
