Banana Muffins

1 cup sugar
1/3 cup butter or margarine, softened
2 eggs
1 1/2 cup mashed bananas
1/3 cup buttermilk
1 2/3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder

Preheat oven to 350 degrees.

Grease muffin tins with butter or cooking spray.

Combine the flour, baking soda, baking powder and salt. Set aside. Cream the butter and sugar in a bowl using an electric mixer or hand mixer. Add the eggs, one at a time. Add the buttermilk and the mashed bananas. Pour in the dry ingredients and beat for 2 minutes.

Bake for 20 - 25 minutes.

*You may add 1 cup of chocolate chips with the mashed bananas.
